For Pink Lemonade Cupcakes, you can use your favorite lemon cupcake or cake recipe and add a bit of red food coloring to make it pink.
You can also use Pillsbury’s Pink Lemonade Cupcake mix. Follow directions on the box.
For frosting, make buttercream with 1/2 cup softened butter, approx. 2 1/4 cups confectioners’ sugar, 2 teaspoons fresh lemon juice, and red food color to tint it pink.
Frost cupcakes when cool and top with fresh lemon zest, red sugar sprinkles and maraschino cherries (patted dry).
For a fun display, fill a glass with pink tissue paper, then place the cupcake on top. Trim a striped straw and gently push into the top to finish
