Bacon Cheddar Potato Skins

Ingredients
  1. 4 large Yukon gold potatoes, scrubbed
  2. ½ cup reduced-fat shredded cheddar cheese
  3. 4 slices bacon, cooked + crumbled
  4. Optional: Plain Greek yogurt or fat-free sour cream
Instructions
  1. Preheat the oven to 400°F. Prick the potatoes with the tines of a fork 2-3 times each. Bake directly on the oven rack for 1 hour, or until soft. Remove from the oven and let cool until they can be handled.
  2. Slice the potatoes in half and scoop out the insides, leaving about ¼-inch of potato and peel (set potato insides aside for another use). Slice each potato half into quarters.
  3. Arrange the potato pieces on a baking sheet and top with bacon and cheddar. Bake for 10-15 minutes until the cheese is melted.
  4. Serve with sour cream for dipping, if desired.
