When it comes to summertime food, there is nothing better than a big, juicy burger. As a mom, I love it even more when I am serving my kids a burger packed with extra protein and vegetables. Black Bean and Veggie-Packed Turkey Burgers are not only juicy and tasty, they are also made with healthy ingredients you will be pleased to place on your dinner table. Veggie-lovers and little meat-eaters will both enjoy the flavor combination of this delicious patty
1 cup canned black beans, rinsed and drained
½ cup finely shredded carrots
½ cup finely chopped sweet bell pepper (red, yellow, orange or green)
1 teaspoon garlic powder
½ teaspoon onion powder
1 teaspoon seasoning salt
1 lb. lean ground turkey
1 Tablespoon olive oil
1. In a small bowl, coarsely mash beans. Add the egg, carrots, bell pepper, garlic powder, onion powder and seasoning salt. Add ground turkey and mix well. Shape into five patties.
2. Heat olive oil in a large skillet over medium heat. Add the burger patties and cook for 7 minutes on each side or until a meat thermometer reads 165°F and juices run clear.
3. Serve on hamburger buns with toppings of your choice.

Summertime means firing up the outdoor grill for cookouts! While Black Bean and Veggie-Packed Turkey Burgers are best made on a stovetop skillet, they can easily be made on a grill. Just use a grill basket, grill skillet or a piece of foil that has been well sprayed with nonstick cooking spray. These burgers are so tender and moist, they sometimes have a hard time holding together when cooked directly over a grill grate.
