Ingredients
  1. 2-(10-ounce) packages chopped frozen spinach, thawed and squeezed dry
  2. 2-(8-ounce) packages lite or lowfat cream cheese
  3. 1 cup grated reduced fat Parmesan cheese
  4. 1 cup plain nonfat Greek yogurt
  5. 1 garlic clove, pressed or finely minced
  6. ½ teaspoon salt
  7. ½ teaspoon ground black pepper
  8. Restaurant style tortilla chips
  9. 1 large tomato, diced, seeds and juice drained
Instructions
  1. In a large sauce pan ,combine spinach, cream cheese, Parmesan cheese, Greek yogurt, garlic, salt and pepper. Cook over medium heat, stirring frequently until heated through, about 5-10 minutes. Arrange chips on a serving platter. Serve dip in bowl garnish with tomatoes.
  2. Serve roughly 1-ounce of chips per serving.

Ingredients
  1. 1-(15.5-ounce) can no salt added black beans, rinsed and drained
  2. ¼ cup red bell peppers, diced
  3. ¼ cup jalapeño peppers, fresh or pickled, sliced (optional)
  4. 1 cup shredded Colby cheese
Instructions
  1. Spoon spinach mixture over chips. Top the nachos with tomato, black beans, peppers and shredded cheese. Serve immediately.
