Yield: Approximately 16 servings
1 (12 fluid-ounce) can frozen pink lemonade concentrate
1 (20-ounce) can pineapple in juice (tidbits or chunks work best) (or roughly 2 1/4 cups)
½ lb. strawberries, frozen
½ lb. red raspberries, frozen
1 liter club soda or naturally flavored sparkling water
Puree concentrate and fruit in a blender until smooth. Place puree in a punch bowl or pitcher, add club soda or sparkling water; combine. Add ice (see tip below) and serve immediately.
Tip: To add even more festive fun to your gathering, add frozen red, white, and blue star-shaped ice cubes to amp up the WOW-factor. For inspiration on the how-to AND the perfect ice-cube tray, check out this post from our friend at Mom to Mom Nutrition!
Nutritionist’s Note: If you prefer a lower sugar option, you can certainly crank up the amount of club soda or cut back on the amount of frozen juice concentrate. Our own MommyRD enjoys this recipe with double the sparkling water!
