Whole Grain, Chia Encrusted, Chocolate Swirl Banana Bread

Craving chocolate (seriously, who isn’t?!), yet not ready for the extra calories after the candy-smothered Halloween events? Then let me welcome you to my solution. Chocolate Swirl Banana Bread. Sure, it’s made with chocolate chips, but it also comes laced with fruit, whole grains and chia seeds to help shove aside any guilt that may be associated with said chocolate.

This bread is truly one to savor. As the weather slowly transforms into a blustery, winter-esque scene, sit back as your home becomes engrossed with the sweet aroma of a freshly baked sweet bread (that smell – LOVE it!).

Adding in the chocolate swirl is the highlight of this recipe for my little ones! Just be careful not to let them over stir as of course, that beautiful swirl will disappear just as quickly as it was created!

I chose to add the banana and chocolate batter in layers, but you could try it with the chocolate solo on top or as polkadots for a different spin.

Whole Grain, Chia Encrusted, Chocolate Swirl Banana Bread

Recipe type: Breakfast Bread
Serves: 16 slices

  • 2 cups whole grain white flour
  • ¾ tsp baking soda
  • ¼ tsp iodized salt (as so many of us cook with sea salt nowadays, it is important to make sure we still provide iodine for our kiddos and choosing to bake with iodized salt is a great way to do so!)
  • ¾ cup sugar
  • ¼ cup unsalted butter
  • 3 medium bananas, mashed
  • 2 large eggs, whisked
  • 5 ounces plain or vanilla Greek yogurt
  • ½ cup mini chocolate chips
  • 1-2 tablespoons chia seeds
  • cooking spray

  1. Lightly spray your 8×4 bread pan with cooking spray. Preheat oven to 350F.
  2. Tablespoon, by tablespoon, add flour to your measuring cup to prevent it from being packed too tightly (and therefore yielding a dense bread).
  3. In a medium mixing bowl, combine flour, baking soda, and salt. Combine.
  4. In a large mixing bowl, or in the bowl of your stand mixer, combine sugar and butter. Mix until well combined. Add room temperature butter, banana, whisked eggs and yogurt. Stir to combine.
  5. Slowly add flour mixture to the wet ingredients. Mix slowly JUST until combined.
  6. In a small glass dish, add chocolate chips and microwave until they begin to melt (about 1 minute). Stir until smooth.
  7. In a small mixing bowl, combine melted chocolate with ½ of the batter. Stir until combined.
  8. Add both plain and chocolate batter to your bread pan in an alternating pattern. Use a toothpick to stir a fun swirled pattern into the bread.
  9. Sprinkle chia seeds over top.
  10. Bake for 1 hour (though as every oven differs, give it the ‘toothpick test’ at 50 minutes. If it comes out clean, it’s ready!) or until the top begins to brown.
  11. Cool, slice, serve and enjoy!
